Watermelon Salad

Cube as much Watermelon as you would like.
Crumble a good quality Feta cheese on top.
Cut plenty of fresh peppermint in small slices.
Lots of freshly grinded black pepper.
Mix and serve.

 
 Cold  Yams, Ginger and Red Pepper Soup

Cut up 1 red bell pepper (small cubes).
Add freshly grated ginger - be generous.
Peel and cut 3-4 yams into smaller pieces and cook. 
In cold water until soft with the grated ginger 
and red pepper.

Puree  - and add butter and whipping cream,
salt and pepper to your taste.

The soup should not be too thin - so use cooking water
sparingly - you can always add more.

Cool at room temperature. When cool, refrigerate for 
at least half an hour. Serve cold and garnish with 
your favourite herb.
